Shredded Beef and Black Bean Chili

Ingredients

  • 1-1/2 lbs top round

  • 2 cups onions, chopped

  • 2 cups green peppers, chopped

  • 2 cups tomatoes, chopped

  • 2 cups black beans, rinsed and drained

  • 2-1/2 cups beef broth

  • 3 Tbsp tomato paste

  • 2 cloves garlic, minced

  • 3 Tbsp chili powder

  • 1 tsp cumin

  • 1 tsp parsley

  • 1/2 tsp sea salt


Directions

  1. Sear steak for about 2 minutes per side and remove from pan.

  2. Add peppers and onions. Cook 5-10 minutes or until soft.

  3. Add garlic and cook for another 1-2 minutes.

  4. Transfer steak and vegetables to the slow cooker.

  5. Add all other ingredients to the slow cooker and cook on low for 8 hours.

  6. Shred Steak and serve.
