Shepherd's Pie with Sweet Potato

Ingredients

  • 1 Tbsp olive oil

  • 2 lbs ground turkey, 97% lean

  • 1 tsp garlic powder

  • 1/2 tsp basil

  • 1/2 tsp oregano

  • Sea salt and pepper to taste

  • 1 cup onion, diced

  • 3 cups spinach or kale, torn into small pieces

  • 3 cups mixed vegetables, frozen

  • 3 medium sweet potatoes, baked or boiled

  • 2 eggs


Directions

  1. Heat oil in a skillet over medium heat. Add ground turkey. Brown until no longer pink.

  2. Add all seasonings. Mix well. Transfer to a large bowl.

  3. Sauté onion and kale in same skillet until slightly soft. Remove from skillet and add to meat mixture.

  4. Add mixed vegetables to skillet. Cover and keep heat on low.

  5. While vegetables cook, mash sweet potatoes until smooth. Add salt to taste and set mashed sweet potato aside.

  6. Transfer mixed vegetables to bowl with turkey, add salt to taste, and whisk in eggs. Mix well.

  7. Pour turkey and vegetable mixture into a 9 x 13-inch baking dish. Spread mashed sweet potatoes over the top.

  8. Bake at 350°F for 30 minutes.
