Ingredients

  • 1 sheet nori seaweed

  • 5 oz. salmon, cooked

  • 1/4 cup avocado, sliced

  • 1 cup cucumbers, sliced

  • 1 Tbsp sesame seeds

  • 1/2 cup blackberries

Dressing:

  • 1/2 Tbsp fresh orange juice

  • 1/2 Tbsp fresh lemon juice

  • 1/2 tsp orange zest

  • 1/2 tsp lemon zest

  • 1/2 tsp brown sugar

  • 1/2 Tbsp tamari

  • 1/2 Tbsp rice vinegar

  • 1/2 tsp olive oil


Directions

  1. Preheat oven to 300°. Toast the Nori Seaweed for about 5 minutes. Remove from the oven and crumble or chop coarsely. Set aside.

  2. To make the dressing, combine all ingredients except the zests and stir. Heat in a small sauce pan until just warm. Do not boil. Remove from the heat and stir in the zests. Set aside.

  3. In a serving bowl, add seaweed, salmon, cucumbers, avocado, and dressing.

  4. You can choose to add the blackberries to the bowl or serve on the side.

  5. Top salmon bowl with sesame seeds. Toss to combine and enjoy!
