Ingredients

  • 1 6-oz salmon filet

  • Teriyaki sauce (recipe below)

  • 2 cups bok choy, halved or quartered

  • 1/2 Tbsp fresh ginger, grated

  • 1 clove garlic, minced

  • 1/2 cup pineapple

Clean Teriyaki Sauce

  • 2 Tbsp tamari or soy sauce

  • 1 Tbsp water

  • 1/2 Tbsp honey

  • 1/2 Tbsp garlic

  • 1/2 Tbsp fresh ginger

  • 1 tsp olive oil


Directions

  1. Preheat oven to 350°F.

  2. Prepare Teriyaki sauce in a medium bowl. Set aside 1 Tbsp to use later.

  3. Place salmon filet in a small bowl and pour teriyaki sauce on top. Let it marinade in the refrigerator for 30 minutes.

  4. Remove salmon from marinade and arrange on baking sheet with bok choy. Add ginger and garlic. Toss. Discard used marinade.

  5. Brush reserved Teriyaki sauce over bok choy. You can bake 1/2 cup pineapple with the salmon or serve on the side when finished. Bake 20 minutes or until salmon is cooked throughout.
