1 large head of cauliflower - cut into florets, then sliced "thin" like chips
1 Tbsp olive oil (or avocado oil)
Sea salt
Ground black pepper
1 Tbsp of GOLO Taco Seasoning
1 cup shredded off the block, cheddar cheese
1 cup black beans
1 lb. choice of shredded chicken, ground turkey, or ground beef
3/4 cup chopped tomatoes
1/4 cup finely chopped red onion
1-2 jalapenos, thinly sliced (optional)
1/2 cup avocado sliced, diced, or mashed
¼ cup chili powder
¼ cup cumin powder
1 Tbsp garlic powder
1 Tbsp onion powder
1 tsp oregano
2 tsp paprika
1 tsp ground pepper
¼ cup pink Himalayan sea salt (optional)
Preheat oven to 425 degrees Fahrenheit. Cut the head of cauliflower into large florets. Then slice them thinly (like chips).
In a bowl add olive oil (or avocado oil), add 1 Tbsp. of the GOLO Taco seasoning, pinch of salt and pepper, mix.
Toss cauliflower in the bowl of seasoned oil. Lay cauliflower across baking sheet, keeping space in between (this will allow them to crisp up). Bake for 20 minutes or until they are cooked and crispy to your liking.
While the cauliflower is cooking, cook your desired meat if it is not already cooked (season with some of the GOLO Taco seasoning).
Push the cauliflower "chips" to the middle of pan. Sprinkle the shredded cheese, meat, and black beans. Continue layering. Place back in oven for about 5-8 minutes, or until the cheese has melted.
Top with the chopped tomatoes, red onion, avocado, and jalapenos.
Serve immediately. Enjoy!
