Rhubarb Banana Bread

Ingredients

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1-1/2 cups whole wheat flour

  • 1/2 tsp sea salt

  • 1 tsp cinnamon

  • 1/2 tsp all spice

  • 2 eggs

  • 1-1/2 tsp vanilla extract

  • 3 bananas, mashed (1-1/2 cups)

  • 1/2 cup strawberries, chopped

  • 1 cup rhubarb


Directions

  1. Preheat oven to 350•F. Spray an 8x4-inch loaf pan with organic cooking spray.

  2. In a small bowl combine baking powder, baking soda, flour, sea salt, cinnamon, and all spice. Mix well. Set aside.

  3. Beat eggs in a medium to large bowl, then add vanilla, bananas, and strawberries. Mix well.

  4. Carefully add the flour mixture. Mix gently/slowly until combined, then fold in the rhubarb.

  5. Pour batter into the loaf pan. Bake for 50 to 55 minutes or until the bread is golden-brown.

  6. Let bread cool for at least 10 minutes before slicing. Cut into 10 equal slices.
