Ingredients

  • 5 cups coleslaw mix (or 4 cups shredded cabbage + 1 cup shredded carrots)

  • 6 cups zucchini noodles

  • 3 cups cucumber, diced

  • 1/4 cup red onion, finely diced

  • 1/2 cup green onions, sliced

  • 6 Tbsp hemp hearts

  • 3 Tbsp pepitas

  • 2 oz raw cashews

  • 2 cups raspberries (or any other fruit)

Ginger Sesame Dressing

  • 3 Tbsp apple cider vinegar

  • 1 Tbsp sesame oil

  • 1 Tbsp soy sauce (can substitute coconut aminos or tamari)


Directions

  1. Prepare Ginger Sesame Dressing: In a small bowl, combine vinegar, sesame oil, and soy sauce. Mix well. Set aside.

  2. Prepare SuperFuel: In a large bowl, combine coleslaw mix, noodles, cucumber, red and green onions, hemp hearts, pepitas, and cashews. Toss.

  3. Add Ginger Sesame Dressing. Toss well to coat thoroughly.

  4. To serve: Place 3 cups salad in a bowl and top with 1/2 cup raspberries.
