5 cups coleslaw mix (or 4 cups shredded cabbage + 1 cup shredded carrots)
6 cups zucchini noodles
3 cups cucumber, diced
1/4 cup red onion, finely diced
1/2 cup green onions, sliced
6 Tbsp hemp hearts
3 Tbsp pepitas
2 oz raw cashews
2 cups raspberries (or any other fruit)
3 Tbsp apple cider vinegar
1 Tbsp sesame oil
1 Tbsp soy sauce (can substitute coconut aminos or tamari)
Prepare Ginger Sesame Dressing: In a small bowl, combine vinegar, sesame oil, and soy sauce. Mix well. Set aside.
Prepare SuperFuel: In a large bowl, combine coleslaw mix, noodles, cucumber, red and green onions, hemp hearts, pepitas, and cashews. Toss.
Add Ginger Sesame Dressing. Toss well to coat thoroughly.
To serve: Place 3 cups salad in a bowl and top with 1/2 cup raspberries.
