Quinoa Veggie Burgers with Sun-dried Tomato & Mozzarella

Ingredients

  • 1 cup cooked quinoa

  • 1 cup mozzarella cheese, shredded

  • 2 sun-dried tomatoes, chopped

  • 2 eggs

  • 3 Tbsp whole wheat flour

  • 2 Tbsp green onion, chopped

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 1 tsp Sriracha

  • 1-2 Tbsp olive oil (for cooking patties)


Directions

  1. In a large bowl mix all ingredients except oil together until thoroughly combined. Form into eight patties.

  2. Heat oil over medium-high heat.

  3. When oil is hot, add patties. Cook 2 to 3 minutes per side or until patties are golden-brown.

  4. Remove from heat. Place on a paper towel to cool.
