1 cup cooked quinoa
1 cup mozzarella cheese, shredded
2 sun-dried tomatoes, chopped
2 eggs
3 Tbsp whole wheat flour
2 Tbsp green onion, chopped
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 tsp Sriracha
1-2 Tbsp olive oil (for cooking patties)
In a large bowl mix all ingredients except oil together until thoroughly combined. Form into eight patties.
Heat oil over medium-high heat.
When oil is hot, add patties. Cook 2 to 3 minutes per side or until patties are golden-brown.
Remove from heat. Place on a paper towel to cool.
