Pumpkin Spice Overnight Oats

Ingredients

  • 1/4 cup pumpkin, pureed

  • 1/4 cup dry oats

  • 1/8 tsp pumpkin pie spice

  • 2 Tbsp chia seeds

  • 1/4 cup whole milk

  • 1/4 cup plain Greek yogurt

  • 1/4 tsp vanilla

  • 1 tsp honey

  • 1 tsp butter, melted

  • Optional toppings could include: almonds, chocolate chips, pepitas etc.


Directions

  1. Add all ingredients into a mason jar and mix well.

  2. Cover and refrigerate overnight.

  3. If adding optional toppings add right before serving.
