1 tsp melted butter (plus a little more for greasing ramekin)
1/4 cup pumpkin puree
1/4 cup dry oats
1/4 cup plain Greek yogurt
1/4 cup whole milk
1 tsp maple syrup
1/2 tsp vanilla
1 tsp pumpkin pie spice
1/2 tsp baking powder
Pinch of sea salt
3 Tbsp pepitas
1/2 cup yogurt
2 oz walnuts
Preheat oven to 350°
Grease an individual size ramekin or oven proof bowl with a small amount of butter
Add all ingredients to ramekin or bowl and stir to combine
Place in oven and bake for 20-30 minutes (baking time could vary depending on size of dish)
Remove from oven, allow to cool and enjoy!
