Pumpkin Pie Baked Oatmeal

Ingredients

  • 1 tsp melted butter (plus a little more for greasing ramekin)

  • 1/4 cup pumpkin puree

  • 1/4 cup dry oats

  • 1/4 cup plain Greek yogurt

  • 1/4 cup whole milk

  • 1 tsp maple syrup

  • 1/2 tsp vanilla

  • 1 tsp pumpkin pie spice

  • 1/2 tsp baking powder

  • Pinch of sea salt

Optional toppings (choose 1 to make a complete breakfast)

  • 3 Tbsp pepitas

  • 1/2 cup yogurt

  • 2 oz walnuts


Directions

  1. Preheat oven to 350°

  2. Grease an individual size ramekin or oven proof bowl with a small amount of butter

  3. Add all ingredients to ramekin or bowl and stir to combine

  4. Place in oven and bake for 20-30 minutes (baking time could vary depending on size of dish)

  5. Remove from oven, allow to cool and enjoy!
