2 Tbsp olive oil
1 lb ground beef, 97% lean
2 cups onions
1 14.5-oz can diced tomatoes, drained
1 15-oz jar tomato sauce
1 15-oz can pumpkin puree
2 cups cauliflower rice
1-1/2 15-oz cans beans of choice
1 cup vegetable or beef broth
2 Tbsp chili powder
2 tsp garlic powder
2 tsp sea salt
1 tsp black pepper
1/2 tsp cinnamon (optional)
1/4 cup avocado slices
1/4 cup plain Greek yogurt
1/4 cup shredded cheese
Sliced green onions (optional)
Heat oil in a large stock pot over medium heat.
Add meat. Cook until browned.
When meat is almost completely cooked, drain excess liquid and add onions. Cook until soft.
Add pureed pumpkin, diced tomatoes, tomato sauce, cauliflower rice, beans, stock, and spices.
Simmer 10-15 minutes, or until heated through and flavors are incorporated. Adjust seasonings, if needed.
Divide into 6 equal servings and top with the listed toppings.
