3 Tbsp coconut oil
1-1/2 cups pumpkin puree
2 tsp vanilla
3 Tbsp honey
2 eggs
1/2 cup whole wheat flour
1 cup oatmeal
1/2 tsp sea salt
1 tsp baking soda
1 tsp cinnamon
1/2 tsp pumpkin pie spice
Preheat oven to 375°F.
Grease a 9x13-inch baking pan.
In a large bowl combine coconut oil, pumpkin, vanilla, honey, and eggs. Mix well.
Add dry ingredients. Mix well.
Using a small spatula, spread the mixture out as evenly as possible in the baking pan. If you prefer softer/chewier oats, let batter sit for 10 minutes before baking (optional).
Bake for 16 to 18 minutes or until a toothpick comes out clean when inserted into center.
Remove from oven. Let cool for about 10 minutes then cut into 6 equal bars.
