Pumpkin Breakfast Bars

Ingredients

  • 3 Tbsp coconut oil

  • 1-1/2 cups pumpkin puree

  • 2 tsp vanilla

  • 3 Tbsp honey

  • 2 eggs

  • 1/2 cup whole wheat flour

  • 1 cup oatmeal

  • 1/2 tsp sea salt

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 tsp pumpkin pie spice


Directions

  1. Preheat oven to 375°F.

  2. Grease a 9x13-inch baking pan.

  3. In a large bowl combine coconut oil, pumpkin, vanilla, honey, and eggs. Mix well.

  4. Add dry ingredients. Mix well.

  5. Using a small spatula, spread the mixture out as evenly as possible in the baking pan. If you prefer softer/chewier oats, let batter sit for 10 minutes before baking (optional).

  6. Bake for 16 to 18 minutes or until a toothpick comes out clean when inserted into center.

  7. Remove from oven. Let cool for about 10 minutes then cut into 6 equal bars.
