2 tsp sea salt
2 tsp garlic powder
1 tsp cinnamon
1 tsp dried thyme leaves
1 tsp ground ginger
1 tsp turmeric
1.5 lb top round
3 cloves garlic, whole
2 cups green bell peppers, chopped
1/4 cup water
½ cup brown rice, cooked
½ cup onion
1 cup romaine lettuce, chopped
1/4 cup avocado
1 tsp cilantro, chopped
Mix together all of the seasonings except garlic cloves. Rub evenly over the top round. Stick the garlic cloves into the beef and place in your pressure cooker.
Add peppers on top of the beef.
Pour water around (not on top) of the Roast.
Set the manual pressure setting time to 90 minutes. Let it vent naturally when the timer expires.
Transfer the beef to a serving dish and shred with two forks. Pour some of the juices from the pot of the shredded beef. Divide beef into 4 equal servings.
Serve with 1/2 cup cooked brown rice, onions, lettuce, avocado, and cilantro for a complete GOLO meal!
