2lb chicken, sliced or diced
1 cup onion, diced
2 Tbsp garlic
5 cups broccoli
4 cups mushrooms, sliced
3 Tbsp tamari or soy sauce
1 cup chicken or beef broth
1 Tbsp brown sugar
1 Tsp ground ginger
2 tsp olive oil
2 Tbsp corn starch
2-1/2 cups cooked brown rice
Add olive oil to the pressure cooker and sauté the onions until they are translucent.
Add the chicken and liquid marinade to the cooker and set it on manual high pressure for 10 minutes. When timer goes off, immediately use the quick release pressure valve. Once pressure is released, carefully remove lid. (Make sure to follow manufacturers instructions regarding the use of the release valve and removing the lid).
Slice or dice the chicken. Dice the onion, mince garlic, cut broccoli and slice mushrooms. Have this prepped before starting.
In a medium bowl, combine the tamari (or soy sauce), brown sugar, broth, garlic and ginger.
Add this liquid mixture to the meat and set aside.
While meat is cooking, use a steamer to steam the broccoli & mushrooms together or sauté in a saucepan until al dente. Drain and set aside.
Carefully remove about 1/4 cup hot juices from the pressure cooker and place in a small bowl. Add 2 Tbsp of corn starch. Using a fork or whisk mix until well combined. Add mixture back into the pressure cooker. This will thicken the juices. Add the broccoli and mushrooms and stir until sauce covers the vegetables.
Serve over 1/2 cup brown rice and enjoy!
Directions if using a Slow Cooker:
Slice or dice the chicken. Dice the onion, mince garlic, cut broccoli and slice mushrooms. Have this prepped before starting.
Add tamari (or soy sauce), brown sugar, broth, garlic and ginger to the slow cooker and stir to combine.
Add chicken and onions into liquid. Stir and cover. Cook on low for about 3 1/2 to 4 hours, or until the chicken is cooked and tender.
Open lid and remove about 1/4 cup of the juices and place in a small bowl. Add 2 Tbsp of corn starch. Using a fork or whisk mix until well combined. Once mixed together, add back into slow cooker and stir. Add broccoli and mushrooms, increase heat to high and let cook for another 20-30 minutes or until cooked to your liking.
Serve over 1/2 cup brown rice and enjoy!
