Pineapple Cauliflower Rice

Ingredients

  • 3 cups cauliflower rice, uncooked

  • 1 cup pineapple, diced

  • 1 cup green beans, chopped

  • 1/4 tsp garlic powder

  • Sea salt and pepper to taste

  • 3 Tbsp tamari sauce, soy sauce, or coconut aminos

  • 1/4 cup green onions, chopped


Directions

  1. Preheat oven to 400°F.

  2. Spread all ingredients, except green onions and tamari, evenly on a large baking sheet. Sprinkle with salt and pepper.

  3. Bake for 15 minutes.

  4. Toss ingredients around on tray and return to oven for another 10 minutes.

  5. Remove from oven and transfer into a large bowl. Add tamari and green onions. Mix well.

  6. Separate into 2 equal servings
