Pesto Grilled Shrimp

Ingredients

  • 1/2 cup basil

  • 1 clove garlic

  • 2 Tbsp parmesan cheese

  • 2 Tbsp olive oil

  • 1 Tbsp lemon juice

  • 1 Tbsp roasted pine nuts

  • Sea salt & pepper

  • 2 lbs shrimp, peeled and deveined

  • Wooden skewers


Directions

  1. Prepare pesto: Pulse basil, garlic, parmesan, olive oil, lemon juice, pine nuts, salt, and pepper in a food processor or blender or until smooth.

  2. Marinate shrimp in the pesto for at least 20 minutes in the refrigerator.

  3. Divide shrimp into 5 equal servings and place on skewers. Grill over medium-high heat 2-3 minutes per side, until cooked through.
