1/2 cup basil
1 clove garlic
2 Tbsp parmesan cheese
2 Tbsp olive oil
1 Tbsp lemon juice
1 Tbsp roasted pine nuts
Sea salt & pepper
2 lbs shrimp, peeled and deveined
Wooden skewers
Prepare pesto: Pulse basil, garlic, parmesan, olive oil, lemon juice, pine nuts, salt, and pepper in a food processor or blender or until smooth.
Marinate shrimp in the pesto for at least 20 minutes in the refrigerator.
Divide shrimp into 5 equal servings and place on skewers. Grill over medium-high heat 2-3 minutes per side, until cooked through.
