Peppered Frittata

Ingredients

  • 5 Eggs

  • 1/2 Cup Whole Milk

  • 1 Tbsp Dijon Mustard

  • 2 Cup Potatoes, cooked and diced

  • 1/4 Cup Canadian Bacon

  • 1/2 Cup Cheese, grated

  • 1/4 Cup Red Pepper, finely chopped

  • 1 Tbsp olive oil


Directions

  1. In a bowl, whisk Eggs, Milk and Dijon Mustard. Add Potatoes, Canadian Bacon, half the Cheese and half the Peppers.

  2. Pour the mixture of Eggs into a greased 9-inch pie plate or 8-inch square pan with the olive oil. Sprinkle with remaining Cheese and Pepper

  3. Cook in a preheated oven at 350 degrees for about 20 minutes or until the Eggs are set.

  4. Broil for about 2 minutes or until Frittata is lightly puffed. Let cool on a rack for about 5 minutes.

  5. Use a spatula to loosen the edges from the pan and cut into wedges.
