5 Eggs
1/2 Cup Whole Milk
1 Tbsp Dijon Mustard
2 Cup Potatoes, cooked and diced
1/4 Cup Canadian Bacon
1/2 Cup Cheese, grated
1/4 Cup Red Pepper, finely chopped
1 Tbsp olive oil
In a bowl, whisk Eggs, Milk and Dijon Mustard. Add Potatoes, Canadian Bacon, half the Cheese and half the Peppers.
Pour the mixture of Eggs into a greased 9-inch pie plate or 8-inch square pan with the olive oil. Sprinkle with remaining Cheese and Pepper
Cook in a preheated oven at 350 degrees for about 20 minutes or until the Eggs are set.
Broil for about 2 minutes or until Frittata is lightly puffed. Let cool on a rack for about 5 minutes.
Use a spatula to loosen the edges from the pan and cut into wedges.
