.5 oz. (2 Tbsp) walnuts, chopped and toasted
1 tsp cinnamon
1/4 cup avocado, mashed
1 Tbsp chia seeds
1 slice whole grain bread, toasted
1/2 cup pears, thinly sliced
.5 oz. (1 tbsp) gorgonzola cheese
1/2 tsp honey
In a small sauce pan, over low heat, toast the walnuts and cinnamon until golden brown and walnuts form a nutty fragrance. Stir and shake the pan so that walnuts do not burn.
In a small bowl, smash the avocado and mix in the chia seeds.
Spread the mashed avocado on toast.
Assemble the sliced pears and gorgonzola on top of avocado.
Top with cinnamon toasted walnuts and honey.
