1-1/2 cups oatmeal
1/4 cup unsweetened coconut flakes
1 tsp cinnamon
2 Tbsp coconut oil
2 Tbsp honey
1 tsp vanilla
Preheat oven to 250°F. Cover baking sheet with parchment paper.
In a medium-sized bowl combine oatmeal, coconut flakes, and cinnamon. Mix well.
In a small saucepan over low heat combine coconut oil and honey. Once oil has melted, add vanilla. Mix well.
Pour hot liquids over dry ingredients. Mix until dry ingredients are thoroughly coated.
Spread mixture onto prepared pan in one even layer. Bake for 75 minutes.
Remove from oven. Let cool, then store in an air-tight container at room temperature for up to two weeks.
