New Year, New You, Black-Eyed Pea Salad


MAKES: serving

Ingredients

  • 1, 15 oz can of black-eyed peas, drained & rinsed

  • 2 cups grape tomatoes, halved

  • 1/2 cup red onion, finely chopped

  • 1 cup bell pepper, finely chopped (your choice of color)

  • 1/2 of 1 jalapeno, finely chopped, seeds removed (use smaller amount for less heat)

  • 2 green onions, chopped

  • 1 Tbsp fresh parsley leaves, chopped

  • 2 Tbsp unseasoned rice wine vinegar

  • 2 Tbsp olive oil

  • 1/2 tsp raw sugar

  • Sea salt and black pepper, to taste

  • 3 cups romaine lettuce - this will be used when serving. It can be kept in a separate container until you are ready to serve.


Directions

  1. In a large bowl, with a lid, combine the first 7 ingredients.

  2. In a separate small bowl, whisk together the rice wine vinegar, oil, sugar, and salt and pepper to make the dressing.

  3. Add the dressing to the salad and stir gently to combine. Cover and let marinate for up to 8 hours in the refrigerator.

  4. Separate into 3 equal servings.

  5. To serve: Add one cup of romaine lettuce to a bowl and top with one serving of the Black-Eyed Pea Salad.
