2 Tbsp olive oil, divided
3 cups cauliflower rice
2 cups onions, chopped
3 cups mushrooms, sliced
4 Tbsp garlic, minced
2 Tbsp tamari or soy sauce
4 cups spinach
Sea salt and pepper to taste
2 cups cooked brown rice (measure after cooking)
In a large skillet, heat 1 Tbsp olive oil. Add cauliflower rice. Pan fry about 5 minutes. Set aside.
In the same skillet, add remaining oil and onions. Sauté until fragrant.
Toss in mushrooms. Sauté for another 5 minutes, then add garlic. Stir together.
Add cauliflower rice and tamari or soy. Stir. Cook until cauliflower rice has absorbed sauce.
Toss in spinach and cook until slightly wilted.
Divide into 4 equal servings. Serve each with 1/2 cup brown rice.
