Ingredients

  • 2 Tbsp olive oil, divided

  • 3 cups cauliflower rice

  • 2 cups onions, chopped

  • 3 cups mushrooms, sliced

  • 4 Tbsp garlic, minced

  • 2 Tbsp tamari or soy sauce

  • 4 cups spinach

  • Sea salt and pepper to taste

  • 2 cups cooked brown rice (measure after cooking)


Directions

  1. In a large skillet, heat 1 Tbsp olive oil. Add cauliflower rice. Pan fry about 5 minutes. Set aside.

  2. In the same skillet, add remaining oil and onions. Sauté until fragrant.

  3. Toss in mushrooms. Sauté for another 5 minutes, then add garlic. Stir together.

  4. Add cauliflower rice and tamari or soy. Stir. Cook until cauliflower rice has absorbed sauce.

  5. Toss in spinach and cook until slightly wilted.

  6. Divide into 4 equal servings. Serve each with 1/2 cup brown rice.
