Ingredients

  • 1 whole wheat tortilla

  • 2 oz cheese, grated

  • 1 egg

  • 1/4 cup avocado

  • Sea salt and pepper to taste


Directions

  1. Preheat oven to 350°F.

  2. Place your tortilla on a baking sheet and sprinkle with cheese. Place in the oven. Bake for 10 to 12 minutes or until tortilla is crispy and cheese is melted.

  3. Fry egg in a skillet over medium heat for about 5 minutes or until white is completely cooked but yolk is still runny. Remove from heat. Season with salt and pepper.

  4. Remove tortilla from oven. Top with mashed avocado. Season with salt and pepper.

  5. Add fried egg. Serve immediately.
