Mexican Grilled Corn

Ingredients

  • 8 ears sweet corn, shucked and silks removed

  • 2-3 Tbsp olive oil to brush corn

  • 1/2 cup plain Greek yogurt

  • 1/4 cup parmesan cheese, grated

  • 1 Tbsp GOLO Taco Seasoning (ingredients below)

  • 1 Tbsp fresh lime juice

  • 1 tsp sea salt

  • Cilantro (optional)

GOLO Taco Seasoning (combine all ingredients)

  • 1/4 cup chili powder

  • 2 Tbsp cumin powder

  • 1 Tbsp garlic powder

  • 1 Tbsp onion powder

  • 1 tsp oregano

  • 2 tsp paprika

  • 1 tsp pepper

  • 1 Tbsp sea salt (optional)


Directions

  1. Lightly brush each ear of corn with oil.

  2. Grill 10 minutes, turning often to avoid burning. Corn should be brown in places and cooked through.

  3. In a small bowl, combine yogurt, parmesan, GOLO Taco Seasoning, lime juice and salt.

  4. Remove corn from grill and brush with yogurt mixture.

  5. Sprinkle each ear of corn with cilantro, parmesan cheese and lime juice (optional).
