12 oz. ground chicken, cooked
1 tsp olive oil
1 cup green bell peppers, diced
1 cup red onion, diced
1 cup cherry tomatoes
8 olives, pitted and sliced
4 Tbsp salsa
If you have not made the refried beans or cooked the ground chicken, do so and set to the side. In a sauté pan, add the olive oil and sauté vegetables.
Add all the items back to the sauté pan and reheat, if needed.
Divide evenly into 2 servings.
Top with salsa and serve immediately. Enjoy!
