Ingredients

  • 1 cup Refried Beans: https://www.golo.com/blogs/recipes/golo-refried-beans

  • 12 oz. ground chicken, cooked

  • 1 tsp olive oil

  • 1 cup green bell peppers, diced

  • 1 cup red onion, diced

  • 1 cup cherry tomatoes

  • 8 olives, pitted and sliced

  • 4 Tbsp salsa


Directions

  1. If you have not made the refried beans or cooked the ground chicken, do so and set to the side. In a sauté pan, add the olive oil and sauté vegetables.

  2. Add all the items back to the sauté pan and reheat, if needed.

  3. Divide evenly into 2 servings.

  4. Top with salsa and serve immediately. Enjoy!
