1 Cup Cucumber, sliced
1 Cup Tomatoes, chopped
1 Cup Green Peppers, chopped
1 Cup Red Onion, thinly sliced
1 Cup Whole Wheat Linguine Pasta, cooked
6 oz Grilled Chicken, cut into bite sized pieces
1 Tbsp Apple Cider Vinegar
2 Tbsp Olive Oil, divided
1 Clove Garlic, minced
1 Tsp Dijon Mustard
1/2 Tsp Honey
1 Tsp Italian Seasoning
Sea Salt and Pepper to taste
In a large bowl combine cucumbers, tomatoes, peppers, onions, pasta and chicken.
In a separate bowl add apple cider vinegar, olive oil, garlic cloves, Dijon mustard, honey, Italian seasoning, sea salt and pepper. Whisk thoroughly.
