2 cups cucumbers, diced
2 Tbsp olive oil
Juice from 1 lemon
¼ tsp garlic powder
½ tsp sea salt
Black pepper to taste
2 cups couscous, cooked and cooled
2 oz Feta cheese
¼ cup fresh parsley, chopped
Put the diced cucumbers in a large bowl.
In a small bowl add olive oil, lemon juice, garlic powder, salt and pepper. Mix well and pour over cucumbers. Toss to coat.
Add the couscous to the cucumbers and top with Feta cheese. Toss to mix well
