Korean Beef & Quinoa Bowl

Ingredients

  • 2 tsp olive oil

  • 1 clove garlic, minced

  • 1/8 tsp ground ginger

  • 1-1/4 lbs ground beef, 97% lean

  • 1 tsp brown sugar

  • 1 Tbsp tamari or soy sauce

  • 1/4 tsp red pepper flakes, to taste

  • Sea salt and pepper, to taste

  • 1/2 Tbsp sesame oil

  • 1-1/2 cups quinoa, cooked

  • 2 green onions, thinly sliced


Directions

  1. Heat olive oil in a large pan. Add garlic and ginger. Cook for about 1 minute, stirring constantly. Add ground beef and brown completely. Drain fat.

  2. In a small bowl, combine brown sugar, tamari / soy sauce, red pepper flakes, salt, and pepper.

  3. Add soy sauce mixture to ground beef and cook 3-5 minutes to allow flavors to set.

  4. Turn off heat, add sesame oil and gently stir to combine.

  5. Divide into 3 equal servings.

  6. Serve beef over quinoa and top with green onion.
