2 tsp olive oil
1 clove garlic, minced
1/8 tsp ground ginger
1-1/4 lbs ground beef, 97% lean
1 tsp brown sugar
1 Tbsp tamari or soy sauce
1/4 tsp red pepper flakes, to taste
Sea salt and pepper, to taste
1/2 Tbsp sesame oil
1-1/2 cups quinoa, cooked
2 green onions, thinly sliced
Heat olive oil in a large pan. Add garlic and ginger. Cook for about 1 minute, stirring constantly. Add ground beef and brown completely. Drain fat.
In a small bowl, combine brown sugar, tamari / soy sauce, red pepper flakes, salt, and pepper.
Add soy sauce mixture to ground beef and cook 3-5 minutes to allow flavors to set.
Turn off heat, add sesame oil and gently stir to combine.
Divide into 3 equal servings.
Serve beef over quinoa and top with green onion.
