Instant Pot Beef Fajita Salad

Ingredients

  • 1 Tbsp avocado or olive oil

  • 1 large onion, thinly sliced

  • 1 large bell pepper (any color), thinly sliced

  • 1 lb flank steak, cut into thin strips

  • 1-1/2 tsp ground cumin

  • 1/2 tsp sea salt

  • 1/2 tsp chili powder

  • 1/2 tsp dried oregano

  • 2 garlic cloves, minced

  • 1/2 cup water

  • 4 cups romaine lettuce, chopped

  • 1 15-oz can black beans or kidney beans, rinsed and drained

  • 1 cup fresh salsa

  • 2 cups plain Greek yogurt

  • 1/2 cup black olives, sliced


Directions

  1. Add oil to instant pot and press "sauté."

  2. Add onion and bell peppers. Sauté 2 minutes, stirring occasionally using metal tongs.

  3. Add beef and all spices. Cook until beef is brown, stirring occasionally.

  4. Add garlic and water.

  5. Close lid and close vent to Sealing position. Press “Manual” button and set to 8 minutes on high pressure. When cooking is complete, use “Quick Release.” Be careful of the steam.

  6. Remove all contents from cooker. Divide into 4 equal servings.

  7. Add 1 cup lettuce and one-fourth of the black beans to each plate. Toss.

  8. Top with 1 serving of fajitas and vegetables, 1/4 cup salsa, 1/2 cup plain Greek yogurt, and garnish with sliced black olives.
