2 cups unbleached all-purpose flour
2 cups whole wheat flour
1 cup fresh starter (https://www.kingarthurflour.com/recipes/sourdough-starter-recipe )
1/4 cup coconut oil, melted
1/4 cup raw honey
1-1/2 cups water
2 tsp sea salt
In a mixing bowl combine sourdough starter, water, and whole wheat flour. Stir to combine.
Add flour, salt, honey, and coconut oil. Mix to form dough. It is best to use a stand mixer with a dough hook but this is not required.
The dough should not feel sticky and should be pulling away from the sides of the bowl as it mixes. If it is sticky, add flour 1/4-cup at a time until it reaches desired consistency.
Grease a Dutch oven with coconut oil (cast iron works best) and place dough in it. Cover with a dish towel and let it sit overnight.
Preheat oven to 425°F. Place the entire Dutch oven (lid on) into the oven and bake for 30 minutes.
Remove Dutch oven lid and bake for an additional 15 mins.
Remove from oven and allow bread to cool before slicing.
