1-1/2 Cups Zucchini, raw and finely diced into cubes
3 Eggs, lightly scrambled
1-1/4 Cups Panko Bread Crumbs
1/4 Cup Red Pepper, finely diced
1/4 Cup Cheese, shredded
Salt and Pepper to taste
1 Tbsp Olive Oil, to grease the cookie sheet
1 Clove Garlic, finely diced
Preheat oven to 350 degrees.
Place Zucchini, Eggs, Panko, Red Pepper and Cheese into a mixing bowl and stir to combine. Add Sea Salt and Pepper.
The batter should be moist and will come together easily. If it is too moist, add more Panko, 1 tablespoon at a time (do not add more than 4 Tbsp).
Form 15 balls by rolling the batter into your hands. Place Bites onto a greased cookie sheet. They should be the size of a golf ball.
Bake for 20 minutes or until outside is gold and crispy.
