Healthy Shrimp Gumbo

Ingredients

  • 2 Tbsp olive oil

  • 1 tsp butter

  • 3 Tbsp whole wheat flour

  • 1-1/2 cups chicken broth

  • 1 cup yellow onion, diced

  • 1 cup green peppers, diced

  • 1 cup celery, diced

  • 2 cups tomatoes, diced

  • 1-2 garlic cloves, crushed

  • 1 10-oz package frozen sliced okra, thawed

  • 1 Tbsp Cajun Seasoning, recipe: https://www.golo.com/blogs/recipes/golo-cajun-seasoning

  • 1-1/2 lbs shrimp, peeled and deveined

  • Hot sauce (optional)

  • 2 cups quinoa, cooked


Directions

  1. Make the Roux: Heat oil and butter in a large, deep skillet over medium-low heat. Add flour/ Stir constantly for about 20 minutes or until it turns a dark brown / caramel color. Be careful not to let it burn.

  2. Add chicken broth and all vegetables to skillet.

  3. Add seasoning. Mix well. Cook until it starts to bubble.

  4. Add shrimp and cook for about 10 minutes or until shrimp is pink. Remove from heat. Adjust seasonings if needed, and add hot sauce (optional).

  5. Divide into 4 equal servings and top each serving with 1/2 cup cooked quinoa.
