1 tsp olive oil
1-1/2 lbs ground beef, 97% lean
1 cup onion, diced
5 cups mushrooms, sliced
1-1/2 cups whole wheat rotini, uncooked
2 cups of water (using a fluid oz measuring cup)
1/2 cup cheddar cheese, shredded off the block
1 cup shredded mozzarella cheese
4 cups cherry tomatoes, quartered
1 cup frozen peas
Heat olive oil in a pan over med heat. Add ground beef, onions and mushrooms. Cook until meat is no longer pink. Drain fat.
Add uncooked rotini and stir. Add 2 cups water.
Bring to a boil, then reduce heat and simmer 20 minutes. Leave remaining water in pan.
Add cheeses, tomatoes, and peas. Stir until melted and creamy.
Remove from heat. Divide into 6 equal servings.
