Healthy Cheeseburger Skillet

Ingredients

  • 1 tsp olive oil

  • 1-1/2 lbs ground beef, 97% lean

  • 1 cup onion, diced

  • 5 cups mushrooms, sliced

  • 1-1/2 cups whole wheat rotini, uncooked

  • 2 cups of water (using a fluid oz measuring cup)

  • 1/2 cup cheddar cheese, shredded off the block

  • 1 cup shredded mozzarella cheese

  • 4 cups cherry tomatoes, quartered

  • 1 cup frozen peas


Directions

  1. Heat olive oil in a pan over med heat. Add ground beef, onions and mushrooms. Cook until meat is no longer pink. Drain fat.

  2. Add uncooked rotini and stir. Add 2 cups water.

  3. Bring to a boil, then reduce heat and simmer 20 minutes. Leave remaining water in pan.

  4. Add cheeses, tomatoes, and peas. Stir until melted and creamy.

  5. Remove from heat. Divide into 6 equal servings.
