1 Tbsp butter
2 Tbsp onion, chopped
3 cups mushrooms, sliced
3/4 cup vegetable or chicken broth
1/4 tsp onion powder
1/4 tsp garlic powder
1/2 cup whole milk
1/4 cup unbleached all-purpose flour
Sea salt and black pepper
In a large saucepan over medium-high heat, melt butter. Add onions & mushrooms and cook until tender, about 5 to 7 minutes.
Add in broth, onion powder, and garlic powder and bring to a simmer.
In a small bowl, whisk together milk and flour.
Add milk mixture and cook until soup has thickened, about 1 minute.
Season to taste with sea salt and pepper.
Optional - blend with an immersion blender
