6 oz grilled shrimp
1/2 cup romaine, chopped
1/4 cup cherry tomatoes, halved
1/2 cup grilled corn (grilled is optional)
1/4 cup diced cucumber
1/2 cup grilled pineapple, diced (grilled is optional)
2 Tbsp Chili Lime Vinaigrette. Recipe at https://www.golo.com/blogs/recipes/chili-lime-vinaigrette-dressing
Combine all Chili Lime Vinaigrette Dressing ingredients. Mix well. Store extra in a sealed container in the refrigerator and use within one week.
Season and grill shrimp. Set aside.
In a medium bowl, combine romaine, tomatoes, corn, cucumber, and pineapple. Mix well.
Add 6 oz. grilled shrimp. Drizzle with 2 Tbsp Chili Lime Vinaigrette. Toss.
