Grilled Peach & Arugula Salad

Ingredients

  • 1 Tbsp honey

  • 1/3 cup plain Greek yogurt

  • 3 Tbsp olive oil, separated

  • 1 Tbsp balsamic vinegar

  • 1 Tbsp Dijon mustard

  • 2 medium peaches

  • 5 cups baby arugula

  • 1/4 cup goat cheese

  • 1/2 cup blueberries

  • Pinch sea salt


Directions

  1. Combine honey, yogurt, 2 Tbsp oil, vinegar and mustard in a bowl or jar and shake or whisk until combined. Set aside.

  2. Preheat grill. Cut peaches in half and remove pits. Next, cut each half into three wedges. Add to a bowl and toss with remaining 1 Tbsp oil. Grill 2-3 minutes per side. Remove from grill.

  3. Place arugula and goat cheese in a large bowl. Toss with dressing.

  4. Combine blueberries and peaches in a separate bowl.
