1 Tbsp honey
1/3 cup plain Greek yogurt
3 Tbsp olive oil, separated
1 Tbsp balsamic vinegar
1 Tbsp Dijon mustard
2 medium peaches
5 cups baby arugula
1/4 cup goat cheese
1/2 cup blueberries
Pinch sea salt
Combine honey, yogurt, 2 Tbsp oil, vinegar and mustard in a bowl or jar and shake or whisk until combined. Set aside.
Preheat grill. Cut peaches in half and remove pits. Next, cut each half into three wedges. Add to a bowl and toss with remaining 1 Tbsp oil. Grill 2-3 minutes per side. Remove from grill.
Place arugula and goat cheese in a large bowl. Toss with dressing.
Combine blueberries and peaches in a separate bowl.
