2 cloves garlic, chopped
Juice and zest from 1 lemon
1 Tbsp plain Greek yogurt
3 Tbsp olive oil
1 tsp oregano
1/4 tsp sea salt
1/4 tsp pepper
12 oz chicken breast, cut into bite-sized pieces
Wooden skewers
2 cups romaine lettuce, sliced
3/4 cup tomato, diced
1/4 cup red onion, diced
3/4 cup cucumber, diced
4 Kalamata olives, pitted and coarsely chopped

In a large bowl, combine garlic, lemon juice and zest, yogurt, olive oil, oregano, sea salt and pepper. Mix. Add chicken. Mix well to coat.
Cover and refrigerate for at least 30 minutes to marinate. Optional: marinate chicken and make sauce the night before for best flavor.
Remove chicken from marinade and thread onto skewers (pre-soak wooden skewers to prevent burning). Discard marinade.
Grill chicken over medium-high heat 2-4 minutes per side, until cooked through.
Divide lettuce, tomato, onion, cucumber, and olives evenly on 2 plates. Top each with half the chicken and 2 Tbsp tzatziki sauce.
