Ingredients

  • 1/2 cup canned lite coconut milk

  • 1/2 cup whole milk

  • 1 tsp honey (pure maple syrup for vegan recipe)

  • 1 cup (handful) spinach

  • 3 Tbsp chia seeds

  • 1/2 cup fruit

  • Sprinkle of unsweetened coconut flakes (optional)


Directions

  1. Add milks, honey and spinach to a high speed blender and blend until very smooth.

  2. Transfer to a medium bowl. Add chia seeds. Mix.

  3. Let sit for about 15 minutes or overnight in the refrigerator.

  4. Stir before serving. Top with your favorite fruit and coconut flakes (optional). Suggestion - 1/4 cup sliced bananas & 1/4 cup blueberries, or 1/2 cup of one fruit.
