1/2 cup canned lite coconut milk
1/2 cup whole milk
1 tsp honey (pure maple syrup for vegan recipe)
1 cup (handful) spinach
3 Tbsp chia seeds
1/2 cup fruit
Sprinkle of unsweetened coconut flakes (optional)
Add milks, honey and spinach to a high speed blender and blend until very smooth.
Transfer to a medium bowl. Add chia seeds. Mix.
Let sit for about 15 minutes or overnight in the refrigerator.
Stir before serving. Top with your favorite fruit and coconut flakes (optional). Suggestion - 1/4 cup sliced bananas & 1/4 cup blueberries, or 1/2 cup of one fruit.
