Grapefruit and Avocado Bowl

Ingredients

  • 2 Tbsp homemade dressing

  • 1/4 cup cooked quinoa

  • 1/4 cup avocado, sliced

  • 1/4 cup grapefruit, peeled and seeded

  • 3 Tbsp hemp seeds

  • 3 Tbsp sunflower seeds

  • 2 oz. feta cheese

  • 2 cups spinach

Homemade Dressing

  • 2 Tbsp water

  • 1 tsp honey

  • 1/2 tsp Dijon mustard

  • Dash of salt and pepper, to taste

  • Dash of garlic powder


Directions

  1. Prepare homemade dressing, set to the side.

  2. Place the cooked quinoa at the bottom of a bowl.

  3. Assemble the rest if the ingredients on top.

  4. Drizzle the homemade dressing on top. Enjoy!
