1/2 Tbsp instant yeast
1/2 cup warm water
1 Tbsp honey
1 Tbsp olive oil, plus extra for brushing
1/2 tsp sea salt
1- 1/4 cups whole wheat flour
Optional toppings: tomato sauce, hummus, grilled vegetables or chicken, cheese (mozzarella, feta)
Preheat grill to 400°F.
In a medium bowl, combine yeast and warm water. Mix well. Set aside 5 mins, until bubbly. Add honey, oil, salt and 1/4 cup flour. Mix well. Add remaining flour and mix until it forms a soft dough.
Turn out onto a floured surface. Knead about 5 mins, until elastic. Cover dough with a clean towel and set aside, about 30 minutes.
While dough rests, grill desired (optional) toppings.
Divide dough into 5 even balls. Flatten and brush with oil. Place on grill (depending on type of grill, you may want to lay foil down first) oil-side-down, 3-4 mins. Remove and brush opposite side with oil. Spread sauce on the already-grilled side.
Return pizza to grill. Add toppings and close lid. Remove when cheese is melted and slightly browned.
