Ingredients

  • 1 box GOLO Foods Plant Based Blend

  • Romaine lettuce, chopped

  • 2 oz. feta cheese

  • 1/4 cup chopped mixed fresh herbs (parsley, mint, dill)

  • 1/3 cup roasted red peppers, chopped or sliced

  • 1/3 cup cucumbers, chopped

  • 1/3 cup red onion, chopped

  • 2 tsp olive oil

  • 3 Tbsp pepitas

  • 8 olives, sliced

  • Freshly squeezed lemon juice


Directions

  1. Preheat oven to 450°F. Line a baking sheet with parchment paper and rub a small amount of olive oil on the pan. Arrange 1/3 cup of sliced/diced red peppers on the baking sheet and place in the oven for 30-40 minutes, or until the skin is blistery and charred.

  2. When the peppers are almost done, heat the GOLO Foods blend in the microwave or on the stove top.

  3. In two bowls, lay a generous handful of chopped romaine lettuce. Top each salad with half of the mixed herbs, half of the chopped cucumbers and red onion, and half of the roasted red peppers. If you are only eating 1 salad, you can store the remaining ingredients in an airtight container in the refrigerator or up to 1 week.

  4. Drizzle 1 tsp olive oil over each salad and some freshly squeezed lemon. Toss to combine

  5. Top each salad with ½ of the GOLO Foods blend, 1 oz. feta cheese, 1 1/2 Tbsp pepitas, and half of the sliced olives.
