GOLO Breakfast Quesadilla

Ingredients

  • 2 tsp Butter

  • 1/4 Cup Red Bell Pepper, diced

  • 1/4 Cup Red Onion, diced

  • 3 eggs

  • 2 Tbsp Milk

  • Sea Salt and Pepper to taste

  • 1 1/2 Cups Spinach, chopped

  • 4 Small Whole Wheat Tortillas

  • ¼ Cup Mozzarella Cheese


Directions

  1. In a large pan, heat Butter over medium heat.

  2. Cook the Pepper and Onion until soft.

  3. Whisk together the Eggs and Milk; adding Sea Salt and Pepper to taste.

  4. Add the Egg mixture to the pan with the Pepper and Onions. Be sure to stir Eggs frequently until almost cooked through.

  5. Add Spinach and gently fold into the eggs. Cook until the Spinach is wilted and the Eggs are cooked through.

  6. Remove eggs from the pan. Place 2 Tortillas in the pan and top with equal amounts of the Egg mixture. Top each with ½ of the Mozzarella Cheese and the other Tortillas.

  7. Cover pan for 1 minute to allow the Mozzarella Cheese to melt.

  8. Serve immediately and enjoy!
