4 tsp butter, melted and slightly cooled, plus extra to grease pan
1-1/2 cups oats, uncooked
4 oz. walnuts, chopped
2 tsp cinnamon
1/4 tsp ginger, ground
1/4 tsp sea salt
1 cup apples, diced
1/2 cup plain Greek yogurt
1/2 cup whole milk, room temperature
2 eggs, room temperature
1 Tbsp pure maple syrup
1 tsp vanilla extract
4 Tbsp chia seeds
Preheat oven to 350°F. Lightly grease an 8 x 8-inch glass baking dish with butter and set aside.
In a large bowl, combine oats, walnuts, cinnamon, ginger, and salt. Mix in apples, yogurt, milk, eggs, maple syrup, and vanilla. Stir in butter and chia seeds until all ingredients are well combined.
Spread mixture into baking dish and bake 20-30 minutes or until golden brown and oatmeal is set. Cool in baking dish at least 5 minutes before serving.
Cut into 4 equal servings.
