1 cup whole wheat angel hair pasta, cooked
3 cups baby spinach
3/4 cups cherry tomatoes, halved
1 Tbsp olive oil
1/4 cup onion, finely chopped
12 oz. chicken breast
2 cloves garlic, minced
1/4 tsp red pepper flakes
1/3 cup chicken broth
Sea salt and pepper to taste
In a medium saucepan cook 2 oz. pasta as directed on package. Drain; return to saucepan. Stir in spinach, tomatoes and 1 tsp olive oil. Cover to keep warm.
In a medium skillet, heat 2 tsp olive oil over medium-high heat. Add onion and cook for 1 minute. Add chicken, garlic and pepper flakes. Cook 4-6 minutes on each side.
Stir in broth, salt, pepper and cook for 2 minutes or until chicken is cooked through. Remove from heat, stir in pasta and toss to combine.
Serve warm.
