1/2 cup olive oil
1/4 cup apple cider vinegar
1/4 cup onion, chopped
1 Tbsp honey
2 Tbsp tomato paste
1 clove garlic
1-1/2 tsp lemon juice
1 tsp tamari or soy sauce
1 tsp Dijon mustard
1/2 tsp sea salt
1/4 tsp pepper
Combine all ingredients in a food processor or blender and process until very smooth.
Keep refrigerated up to a week.
