1 Tbsp olive oil
1/2 Tbsp lemon juice
1 garlic clove, minced
1 tsp dried oregano
1/2 cup cooked whole grain couscous
1 hardboiled egg, sliced
1 cup romaine lettuce, chopped
1/4 cup green bell pepper, chopped
1/4 cup red onion, chopped
1/4 cup grape tomatoes, chopped
1/4 cup cucumber, chopped
1 oz feta cheese, crumbled
1-1/2 Tbsp pumpkin seeds
Sea salt & pepper to taste
Prepare dressing: in a small bowl, combine olive oil, lemon juice, garlic, and oregano. Mix well. Set aside.
In a large bowl, combine couscous, egg, lettuce, pepper, onion, tomatoes, cucumber, feta cheese, and pumpkin seeds. Mix well.
Add dressing. Toss to coat thoroughly.
Season with salt and pepper to taste.
