Ingredients

  • 1 Tbsp olive oil

  • 1/2 Tbsp lemon juice

  • 1 garlic clove, minced

  • 1 tsp dried oregano

  • 1/2 cup cooked whole grain couscous

  • 1 hardboiled egg, sliced

  • 1 cup romaine lettuce, chopped

  • 1/4 cup green bell pepper, chopped

  • 1/4 cup red onion, chopped

  • 1/4 cup grape tomatoes, chopped

  • 1/4 cup cucumber, chopped

  • 1 oz feta cheese, crumbled

  • 1-1/2 Tbsp pumpkin seeds

  • Sea salt & pepper to taste


Directions

  1. Prepare dressing: in a small bowl, combine olive oil, lemon juice, garlic, and oregano. Mix well. Set aside.

  2. In a large bowl, combine couscous, egg, lettuce, pepper, onion, tomatoes, cucumber, feta cheese, and pumpkin seeds. Mix well.

  3. Add dressing. Toss to coat thoroughly.

  4. Season with salt and pepper to taste.
