1 cup onion
1/2-inch cube of ginger, grated
2 roma tomatoes
1 Tbsp olive oil
1 clove of garlic, minced
1-2 green chilies (optional)
Sea salt, to taste
1 tsp garam masala
1 tsp red chili powder
1/2 tsp turmeric
2 eggs, whisked
1 slice GOLO-approved bread
Separately process, grate, or finely chop 1 cup onion, ginger, and roma tomatoes until they are very small but not pureed. Keep separate.
In a sauté pan over medium-high heat, add olive oil and onions. Once onions are translucent, add ginger, garlic, and green chilis (optional). Stir for about a minute.
Add tomatoes. Cook 2-3 minutes. While tomatoes and vegetables are cooking, whisk eggs and set aside.
Add seasonings to the pan and stir. Add whisked eggs and scramble. Remove from heat.
Transfer to a bowl and serve with 1 slice GOLO-approved bread, toasted. Garnish with chopped raw onion.
