Egg Bake with Potato Crust

Ingredients

  • 1 Tbsp olive oil

  • 2 medium potatoes, regular or sweet

  • Vegetables of choice, any amount (optional)

  • 10 eggs

  • 1/2 cup shredded cheese of choice

  • 1/2 cup whole milk

  • Black pepper, to taste

  • 1 tsp garlic powder


Directions

  1. Preheat oven to 350°F. Brush a 9 x 13-inch baking dish with olive oil.

  2. Bake potatoes until fork-tender, or microwave 5 minutes. Cut into thin circles and layer, covering bottom of baking dish.

  3. Top with diced vegetables (optional).

  4. Whisk together eggs, cheese, milk, black pepper and garlic powder. Pour over vegetables in baking dish.

  5. Bake 30 minutes, or until eggs are baked through.

  6. Cut into 6 equal servings.
