2 Tbsp olive oil
1 cup red onion, chopped
1 cup orange or red bell pepper, chopped
1-1/2 lbs ground chicken
2 cloves garlic, minced

1/2 cup corn
1 cup salsa, plus extra as topping (optional)
10 oz frozen spinach or 16 oz fresh spinach
2 cups black beans, cooked (if canned: rinse & drain)
Plain Greek yogurt (optional)
If using frozen spinach, allow spinach to thaw overnight in the refrigerator in a strainer or colander with a towel underneath. When thawed, take spinach in hand and squeeze out all excess water. For faster thawing, place package in the microwave and warm up in small increments making sure not to over cook the spinach.
Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat.
Add chicken, let sear.
Add onions and peppers, let cook for a couple minutes. Add garlic and GOLO taco seasoning. Continue to cook, stirring occasionally until the chicken is fully cooked.
Reduce the heat to low, add corn and salsa. If using frozen spinach, add the thawed and drained spinach. If you are using fresh spinach, add to the pan in sections to allow it to cook down and wilt. Continuously stir until all of the spinach is added and wilted.
Add black beans and carefully mix well. Remove from heat and adjust seasonings if needed.
You can choose to garnish each serving with a spoonful of plain Greek yogurt and/or additional salsa if desired. Top each serving with a spoonful of plain Greek yogurt and/or additional salsa if desired.
