Surprisingly Simple Bean Burger

Ingredients

  • 1/2 cup black beans, rinsed, drained, and patted dry

  • 1/2 cup cooked brown rice (measure after cooking)

  • 1 cup shredded mozzarella

  • 1 egg

  • Italian seasoning to taste

  • Sea salt and pepper to taste


Directions

  1. Heat a small, non-stick skillet over medium-high heat.

  2. In a medium bowl combine all ingredients and mash them together with a potato masher or fork.

  3. Spoon half of the mixture into the skillet and shape into a patty. Cook for 3 to 4 minutes per side or until sides are firm and slightly crispy.

  4. Repeat with the second burger patty.
