12 oz ground beef or turkey, at least 95% lean
1 cup marinara sauce
4 cups spinach
2 cups canned diced tomatoes
4 cups chicken broth
2 cups cooked lasagna or other pasta (measure after cooking)
2 tsp garlic powder
2 tsp onion powder
1 Tbsp dried basil
2 tsp oregano
2 tsp parsley
Sea salt and pepper to taste
4 oz ricotta cheese
2 oz mozzarella cheese
2 oz parmesan cheese
In a large bowl combine cheeses with salt, pepper, and any other desired seasonings. Mix and set aside.
Brown meat in a soup pot. Drain fat.
Deglaze pot with chicken broth, chopped tomatoes, and marinara.
Mix and bring to a simmer. Add seasonings, salt, and pepper.
Let the soup simmer for 30 minutes. Add spinach.
Adjust seasonings if needed. Remove from heat.
Divide into 4 equal servings. Add 1/2 cup pasta and top with 2 oz cheese mixture per serving.
Serve immediately or refrigerate for up to one week. You can also freeze for later use.
